These Soft Gingerbread Meringue Cookies are so delicious and super easy to make. They are made out of egg whites, brown sugar, granulated sugar, cinnamon, ginger, cloves and crushed gingerbread cookies. They are slightly crispy on the outside and soft on the inside with flavorful spices. If you love the taste of gingerbread then you are going to love these soft gingerbread meringue cookies!

What Are Soft Meringue Cookies?

Soft meringue cookies are popular holiday cookies in Iceland. They are typically made around Christmas and are made mostly from egg whites and sugar (either granulated sugar or brown sugar), and then they often have added candy, chocolate or other delicious add ins.


Instead of baking the meringue for a longer time they are baked for a short time making them extra soft and fluffy on the inside.

How To Make These Soft Gingerbread Meringue Cookies?

I always start by gathering all of the ingredients needed in a recipe and weighing and measuring everything before I start to cook or bake. This part is really important and key in keeping everything organized.

To make these soft gingerbread meringue cookies you start by lining 2 large baking sheets with parchment paper.

Then you combine the egg whites and both sugars in a stand mixer and mix until stiff peak forms.

Then you mix in cinnamon, ginger, cloves and crushed gingerbread cookies until just combined.

Transfer to the lined baking sheets using a small cookie scoop and bake in the oven for 10-12 minutes.

Take out of the oven and let cool down for 5 minutes before removing from the sheet.

How To Store These Soft Gingerbread Meringue Cookies?

Store these soft gingerbread meringue cookies in an airtight container at room temperature for up to 2 weeks.

Recipe Notes:

Sugar – For this recipe I use a mix of brown sugar and granulated sugar. You can also use just 200 gr / 1 cup of either one.

Different Flavors:

If you want to try different add ins than spices and crushed gingerbread cookies you could skip that and replace with any of these ideas:

Chopped chocolate candy (mars, snickers, twix etc), M&M’s, chocolate chips (white, dark, milk), crushed peppermint candy, candy canes, raisins, dried cranberries, shredded coconut.

Soft Gingerbread Meringue Cookies

Soft gingerbread meringue cookies are the perfect holiday cookies! Soft meringue cookies with spices and crushed gingerbread cookies that the entire family is going to love.

Ingredients

3 large egg whites
100 gr / ½ cup dark brown sugar
100 gr / ½ cup granulated sugar
1 tsp ground cinnamon
½ tsp ground ginger
½ tsp ground cloves
140 gr / 5 oz gingerbread cookies, crushed

Instructions

Preheat oven to 150C / 300F

Line 2 large baking sheets with parchment paper.

Combine egg whites and both sugars in the bowl of a stand mixer and mix until stiff peak forms.

Add cinnamon, ginger, cloves and crushed gingerbread cookies and mix until just combined.

Transfer to the lined baking sheets using a small cookie scoop.

Bake for 10-12 minutes or until the meringue cookies are cooked.

Take out of the oven and let cool down for 5 minutes before removing.

To store: Let cool completely down to room temperature and store in an airtight container.
