Cinnamon Sugar Roasted Almonds

Delicious Cinnamon Sugar Roasted Almonds that are made from  only 7 ingredients and are one of my favorite holiday snacks. They are coated in an egg white cinnamon sugar glaze and when they are roasting they fill your home with the most amazing festive cinnamon smell. After I take them out of the oven I like to let them cool down for a few minutes and then serve them warm.

How To Make These Cinnamon Sugar Roasted Almonds?

I always start by gathering all of the ingredients needed in a recipe and weighing and measuring everything before I start to cook or bake. This part is really important and key in keeping everything organized.

To make these cinnamon sugar roasted almonds you start by mixing together egg white and vanilla in a medium mixing bowl until frothy.

Then you add the almonds to the egg whites and stir until evenly coated.

In another mixing bowl you mix together sugars, cinnamon and salt and then add the sugar mixture to the almond mixture.

Then you spread the almonds onto the prepared baking sheet in a thin single layer. The almonds are then baked in the oven for approximately 1 hour tossing every 15 minutes.

After the almonds have cooled down for a few minutes they are ready to be served warm.

Recipe Notes:

Make sure to use a large baking sheet with plenty of room. You don’t want the almonds to overcrowd the sheet.

To Store: Let the almonds cool completely down to room temperature and then store in an airtight container at room temperature for up to 2 weeks.

Substitutions:

Almonds – You can use any other nuts in this recipe. Using a mix of nuts also works great.

Sugar – Instead of using a mix of granulated sugar and brown sugar you can use 200 gr / 1 cup of either one. You can also switch the sugars out for coconut sugar for a slightly healthier option.

Cinnamon Sugar Roasted Almonds

Cinnamon sugar roasted almonds are the ultimate holiday snack and my personal favorite. Cinnamon sugar coated slow roasted almonds that are both crunchy and sweet. I guarantee your whole family is going to love these.

Ingredients

Scale

1 large egg white
1 tsp vanilla extraxt
450 gr / 3 cups whole almonds
100 gr / ½ cup granulated sugar
100 gr / ½ cup packed brown sugar
2 tsp ground cinnamon
½ tsp fine sea salt

Instructions

Preheat oven to 120C / 250F

Line a large baking sheet with parchment paper.

In a medium sized mixing bowl beat together egg white and vanilla extract until frothy. Add the almonds to the bowl and stir until coated.

In another mixing bowl mix together sugars, cinnamon and salt.

Add the sugar mixture to the egg white coated almonds and toss until evenly coated.

Spread onto the prepared baking sheet in a single thin layer.

Bake in the oven for 55-60 minutes. Stirring every 15 minutes.

Let cool down for 3-5 minutes and then serve warm.

To store: Let cool down completely to room temperature and then store in an airtight container.

I made these for a birthday party, using almonds and mixed nuts. We had plenty of birthday cake left, but the roasted cinnamon nuts were gone before we sliced the cake! Delicious!
